Grilled Chicken Nachos, Pollo Loco

Our family seriously loves Pollo Loco. We go at least once a week and we rack up the Loco points and I’ve lost track of how many $10 rewards we’ve redeemed. In fact the girl that works there knows our order and punches it in as soon as she sees us!

If you don’t already know, Pollo Loco chicken makes outstanding, moist, flavorful grilled chicken. I have never had better. There are millions of so-called Pollo Loco chicken recipes on the Internet but you can tell just by reading them that they’re junk.

I’m on a nacho kick after Cabo, and this one was a little different. There’s a creamy green sauce that, while delicious, takes this in a different direction. I kinda missed the tomato based salsa aspect of a traditional nacho dish. Very tasty, just not traditional. Beware, those two green chilis are hot!!

Note there are 3 types of Nachos. Double Chicken Nachos, Shredded Chicken Nachos, and Loco Chicken Nachos. I tried the latter.
