Tumaco Cocoa
Trader Joe’s does it again, this is a superior Cocoa powder. Although the box doesn’t say, it appears to be natural or un-Dutched Cocoa due to its light color and floral overtones.
But don’t let the light color fool you, the flavor is very rich and totally unlike Hersheys or Ghirardelli. Even an expired batch from pre-2016 is still amazing! Ha ha lol!
I’m a frosting nut so I whip up a 1/2 cup batch of frosting using 1 T butter, 3 T Cocoa, 1 T milk, and about 2/3 c finely granulated sugar, or just enough sugar to cut the Cocoa flavor without being too sweet. Then I eat it with a spoon…
I think more milk and more sugar, would make it more creamy, but less chocolatey. Or powdered sugar, except I hate the cornstarch taste – so I tolerate the graininess for the rich taste.
