New Year’s Fondue party
Fondue is a great choice for New Years eve!
We took advantage of Ralph’s cheese counter to obtain three fine cheeses: cave aged Gruyere, Fiscalini San Joaquin Gold (http://www.fiscalinicheese.com/products/san-joaquin-gold), and Murray’s Mifromasui Emmentaler.
Rub the bottom of the fondue pot with a cut garlic glove.
Heat 1/2c dry white wine until bubbling.
Add 1lb coarsely grated or chopped cheeses.
Stir constantly until melted.
Maintain at a simmer.
I added a teaspoon of cornstarch dissolved in a tablespoon of water but I wasn’t sure it made much of a difference.
